Treats for Those Who Can’t Eat Gluten

 

Whether you’ve just found out you have a gluten intolerance or you’re hosting a party that will include gluten-free guests, you may be in a bit of a panic about what to serve. However, there’s really no need to panic. Gluten free definitely doesn’t have to mean you can’t indulge in gorgeous food – and with that in mind, here are some delicious meal ideas that even gluten eaters will enjoy that are both delicious and nutritious.

 

Beef Stir Fry

For a healthy, but delicious meal idea, a quick stir-fry gives you bags of flavour and the opportunity to experiment with vegetables and exciting flavours. This gluten free alternative uses rice noodles that are made from water and rice flour, and occasionally corn starch or tapioca to improve its elasticity. Combine the moreish rice noodles with tangy gluten free sweet chilli sauce, protein filled beef and vegetables and there you have a balanced, tasty meal!

 

Ingredients

200g dried rice noodles
350g sirloin steak
2tbsp gluten-free sweet chilli sauce
2 garlic cloves
2tsp fresh grated ginger
1tbsp sunflower oil
8 spring onions (sliced)
150g mange tout or sugar snap peas
2tbsp fish sauce
2tbsp lime juice
Small bunch of Thai basil

Pancetta and Cannellini Bean Risotto

Risotto is up there with the best of indulgent, comfort foods and because rice is naturally gluten free it’s a great option for those with coeliac disease. This recipe includes pancetta which really gives the dish a lot of flavour, along with the gluten free chicken stock, and also cannellini beans which add protein to the dish and make it extra hearty! There are lots of ingredients for this dish, but don’t be put off as it’s rather actually easy to make.

 

Ingredients

1tbsp olive oil
100g Pancetta
12tsp fennel seeds
50g unsalted butter
1 onion (finely chopped)
1 garlic clove
2tsp finely chopped rosemary
8 thyme sprigs
1 ½ cups of Arborio rice
1/3 cup dry white wine
1.5L gluten-free chicken stock
400g cannellini beans
1/3 cup grated Parmesan
Chopped flat-leaf parsley to serve
